Restaurants and Weddings

Yesterday was pretty hectic for me so I didn't get a post on here.


Here are my eats and treats:


Breakfast, I made blueberry muffins:






Here's the recipe if you wanted to try it!  Let me know if you do!  It's a healthy one!




Blueberry Muffins

1/2 c rolled oats
1/2 c orange juice
1 1/2 c flour
1/2/ c sugar
1 1/4 tsp baking powder
1/4 tsp soda
1/2 tsp salt
/2 c oil
1 egg (beaten)
1 c blueberries
1/4 tsp cinnamon

Combine oats and orange juice.  Stir well.  Add flour, 1/2 cup at a time (I used 1 c all-purpose flour and 1/2 c whole wheat flour), sugar, baking powder, soda, salt, oil and egg.  Stir in blueberries.  Blend 2 tbsp sugar and 1/4 tsp cinnamon and sprinkle over batter.  Bake at 350 for 18-22 minutes.

Lunch was a quick tuna and crackers:


I had to eat this on my way to work.  I was busy all morning packing for camp!

For supper my coworker Clarene took me out to a local restaurant, River's Edge.  It was my last day so she wanted to take me out, her treat!  How could I say no?  Neither of us had ever been there before.  They had a few specials and one was top sirloin steak.  I really can't resist steak!  Plus it came with the soup and salad bar, potatoes (I got Irish potatoes) and bread.








Afterwards I went to my high school to drop off some costumes I had borrowed.  Practice for the summer musical was going on, so I watched.  Kt is double casted as Maria for The Sound of Music.  I can't wait to see it!!




Today was full of packing and a wedding!  I started my day with a waffles mom made.  I did a bit more packing, then went to P90X.  It was Legs and Back today with Ab Ripper X.  A super tough work out!  I felt like giving up half way through but kept going and surprised myself with how much I still had left in me!  My mind usually gives up before my body.  How about you? Do you fail in your mind first or do you push until you have no more strength?


I had about and hour and a half to get ready for the wedding.




We had to stop at a music store before the wedding and had quite a bit of time before the wedding, so we stopped at Caribou.




I felt pretty fancy with my coffee and Apple computer. ;)  I also had a scone I shared with mom.


The wedding was lovely!  My brother, sister-in-law and niece we a groomsman, bridesmaid and flower girl.

The meal after was delicious!  Chicken breast, seasoned mashed potatoes, bread, fresh fruit and salad.




There was cake as well, but I'm not much of a cake fan.. especially the kind they had.  But Makenzie really enjoyed the frosting!




When we arrived home, mom wanted to try some pie I had received the day before at work from a coworker (because it was my last day!).  So we had pie at home instead of cake at the wedding.  An awesome swap!  He told me it was in honor of me loosing 55 pounds.  It was a Weight Watcher's recipe and was low in calories and sugar.  Here's whats in it: light Cool Whip, low fat raspberry yogurt, sugar-free Jell-O in a graham cracker crust topped with fresh raspberries.  Tasty!
