Celebrate with Healthy Snacks!

Happy Independence Day America!!

I hope you celebrated with much gusto!

I certianly did!  I began to prepare for my summer (since it is just now beginning with work ending)!

I milked my very last milking this morning.  I celebrated by deleting my 3:17 AM, 3:30 AM and 3:31 AM alarms on my phone.  They are not welcomed back!

I toasted some french toast from Sunday morning's breakfast for my pre-milking fuel.


And I was very happy to be awake at 3:30 (just kidding!).  But I was very happy it was the last time I had to!!

When I came home my parents were cooking a celebratory breakfast!  I hoped in the shower and when I was out, it was ready!


It is always a treat to have hash browns for breakfast!  And earlier, while I was milking, I was craving sausage!

The first order of business was to make a list of all the things I needed for camp.  I'm addicted to lists.. anyone else?! 

I wanted to try out a recycled shirt pattern for a swimsuit cover up.  This is where you can find the pattern.  It's so simple and easy!  My mom even made me make her one too!


Camp food.  You know it's not that healthy.  So, to solve this, I made a list of some healthy snacks I could bring with to spruce up boring meals!

First, I quickly mixed up two batches of fruit leather (aka fruit roll-ups).  Here is the recipe.  We are all out of our own homemade applesauce, but we had some frozen from a family friend.  I made two quarts- four pans of fruit roll-ups.  I made apple-cinnamon, strawberry, blueberry, and strawberry-blueberry.


 Lunch was a lovely cool rhubarb slush.  I'll have to post a recipe soon.  Since it was in the upper 90's today with high humidity this is all we had!  It was very refreshing and we sat on the deck and leisurely drank them.



Next, I rediscovered a cracker recipe I had found on Pinterest.  It's gluten free if you can't eat gluten (Kt!).  I found two recipes: Savory Pumpkin/Flaxseed Onion Crackers and Plain Flax-Sunflower-Sesame Crackers or Rosemary & Dried Currant Flax Crackers.  We didn't have all the ingredients so I hope to be making them tomorrow (I got the groceries after church tonight)!

I also though that some good garlic-y hummus would taste really great on these!  So I found a recipe here.  But I came upon the ingredient tahini.  I had no clue what this was so I Googled it and found a recipe for it here (it's super easy).

1. Roast (but don't brown) the sesame seeds.  I only needed 1/3 cup tahini, so I used 1/2 cup sesame seeds.


2. Blend with olive oil (I used 2 1/2 tablespoons) until it is a thick but pourable substance.



Voila!  You have tahini!!

I then proceeded to blend all the hummus ingredients together to make a lovely spreadable dip!


We added a bit more garlic than called for, and garlic my cousin organically raises here!).  When mom tasted it, she exclaimed it was to die for.  I would have to agree with her!

Supper was a quick conglomeration of everything fresh or in the fridge: fresh brat, hummus, salad greens, watermelon and fresh picked peas in warm milk with butter, salt and pepper.  This is how I've eaten fresh peas for my whole life.  It is literally my favorite part of the summer garden!  I look forward to it every summer!


It was quick showers for all of us and off to church where we enjoyed some very cool air conditioning.  We have no AC in our house so it's was a real treat!  Especially since it was so hot today!
