Tuesday brought a day full of healthy food and good exercise. My mom and dad had made pancakes (from scratch, of course!) for breakfast and there was some batter left. So I made two pancakes with blueberries in them. I measured out 1/2 cup so I could eat the rest and count it as one fruit for the day!
The way my dad makes blueberry pancakes is to put the batter down on the griddle then plop a bunch of blueberries in the top.
Then you cook them like regular. They were so delicious with honey on them!!
I did my Tuesday work out through twice. It took almost half an hour! (Just wait, next week I'm going to do them through three circuits!)
For lunch I warmed up some potato soup left overs. I love leftovers! It was very tasty and very hearty. Of course, it was from scratch. We can potato soup along with many other things in the fall and use them all year long. Mom had added little sausage balls that make the soup just a little tastier.
After work, our supper was meager. Mom made egg salad and we had sandwiches. I pretty much despise egg salad. We had some left over avocados from the salad we made for Easter so I made a tasty sandwich.
I had picked up some goat cheese on the way home and wanted to try mashed avocado mixed with goat cheese for a spread on a sandwich. It was actually pretty good. We still have 3 more avocados so I think this will be in store for me in the coming days.
After supper, about 8:00, I still needed to get some more exercise in, so I did couch-to-5k. This week it is 5 minute warm up walk, then alternating 90 seconds running, 2 minutes walking. Finished with a 5 minute cool down walk.
I had a major breakthrough while I was running yesterday! After the 5 minute warm-up-brisk-walk, Wilma (Katy and I named the voice on my phone app) told me to begin running. Normally I would go into a very slow jog and hardly pick up my feet. But suddenly, I felt my feet getting off the ground and my body propelling itself forward faster than I usually would go! It was a great feeling which was much needed since yesterday was about forty degrees and windy. The fronts of my legs were numb by they time I was half way. Thank goodness I went with the wind on my second half!
I also took a little different route yesterday! I went down and back our neighbor's field road next to our property. Then down the opposite way I normally run (up a hill!). I turned around half way and when I got to my house, I wasn't done, so I used my neighbor's driveway! :) Not wanting to startle their dogs, I took a short cut to their back driveway on a four wheeler path. I was done only about 3 feet from my house. So the route was a success!
I then proceeded to collapse on my bed and fall asleep.. I had to get up at 3:17 to milk cows today!
After milking, I came home and made some scrambled eggs with ham slices in it. Sadly it was not Easter ham, just regular sandwich meat. I showered and was about to take a nap when the computer jumped out and took me hostage! I watch the episode of Biggest Loser that I missed the night before. It was a good one! (The continuation of makeover week!)

I was so happy to see Chris finally be voted out! I would have been so devastated if they had voted Kim off. She deserves to be there! I looked into the challenge that Mrs. Obama talked about, but I cannot decide which contestant to register under: Kim, Buddy or Jeremy?! Kim is just such a fighter and so strong. Buddy is the most loving and gentle father I've seen. And Jeremy just makes me laugh... every episode! Comment on who your favorite is!
I finally went to nap and ended up sleeping two hours instead of the planned one. Oops!
I made myself lunch: Tuna melt. I decided to add a new twist to an old favorite: Goat Cheese.
I only did half with goat cheese because I didn't know how I would like it. I turned out so good! Plus, I got the garlic and herb flavored cheese so it was very tasty! Definitely worth trying again!
I ran this afternoon after some household choruses were done. And yet, another breakthrough occurred! This time, not only did I run with my feet off the ground, but I kept all my running paces (except the last one) above a ten minute mile! I was so pumped! I need to set myself goals like that so I achieve them and feel like I've accomplished something! What a great feeling!
Supper was nothing ultra healthy: just sloppy joes with corn and chips and salsa.
Well I'm about ready to turn in for the night!
