A Weekend Review

My oh my, it has been some time!  There is lots to catch you up on, but I will try to make it readable (i.e. not too long ;) )

Thursday night all the girls came over for our Spring Break sleep over!  Well, all except Ariel who's spring break was 2 or 3 weeks ago :)

Mom made an amazing supper!  Double Sun Dried Tomato Pasta, Rosemary Focaccia Bread and a green salad.  It was all super amazing!




Erin and Brooke's mom makes homemade yogurt and this ranch on the salad was made from it.  It was very tasty!  And much less fatty than regular ranch!

I made something healthy for dessert.  I cut five bananas in half and stuck little skewers in them and froze them.


After they were frozen, I made sugar free chocolate pudding..


...and dipped the bananas in it...


...then sprinkled half with chopped peanuts...



Then freeze them again and serve!  They were a hit!!

The evening continued uneventfully.  We ate lots of fruit and veggies (since I wanted to have a healthy party!) and watch two movies: Ice Castles and Flyboys.  I know, totally opposite movies!  But we all loved both of them!  In typical girl fashion, we didn't go to bed until about 4 AM.  I'm glad I didn't have to milk! ;)

The morning brought some great work outs and green smoothies!  We did month two of INSANITY ab workout!  We were all hurting afterwards!  I made all the girls and a friend of my mom's green smoothies: Kale, milk, frozen mangos, frozen pineapple, and banana.

Everyone got one, including my mom's friend who was very skeptical.. but it was loved by all.  I have yet to meet someone who doesn't like my green smoothies!  They are becoming a specialty of mine!


Erin had to leave for work and the rest of the girls stayed and did facials!!  Yeah, when we're together, we're ultra girly!!


After the girls left it was a pretty low key day.

I made my own fruit rollups.  Don't worry!  They are VERY healthy and all natural!  My mom used to make these when I was a little.  This is how you make it:
Take a quart of applesauce and split in two (This is our homemade applesauce).  I made two different flavors, but you can leave it as just an apple fruit rollup.
I made strawberry and blueberry.  I blended the fruit up to mix with the applesauce.



Then mix it with the apple sauce.


Spray a tray (this is from a dehydrator) with cooking spray and pour on the concoction.


Dehydrate on fruit and vegetable for 11 hours.


And viola!  Healthy fruit rollups!  I like them without sugar in them because it adds a little tang.



Saturday started bright and early with milking at 4 AM then work from 10-6.  It was a gorgeous day and I just wanted to lay outside.  Instead, when I got home I ate and went for a little bike ride.  I saw a couple riding their bikes on the way home from work and I realized I hadn't biked in a long time.  I wanted it to be 45 minutes and I thought I could do that with a 5 mile bike ride, but when I got to the half way point, I still had plenty of time.  So I went on an adventure and found my way around a few back roads I wasn't familiar with.  When I got home, dad and I calculated how far I had gone: eight miles.  It was a good ride, but I was pretty sore in the morning!

I had to milk on Sunday morning, then church.  We had a fellowship dinner after and I had some delicious chocolate peanut butter cake stuff.  We had a meeting afterward.  Brooke and I were in the nursery with two little cuties.  When I got home I took a lovely two hour nap.  I got up for about an hour then went back to bed.

This morning, I had to milk (third day in a row!).  I got home and ate some tasty eggs with ham and feta cheese sprinkled on top.


I did my Monday work out: three circuits.  It felt so good to work out again!


The rest of the day has been spent writing this post pretty much!  Sorry it was soooo loooong!
