Happy happy Friday!!
It was a windy day here in central Minnesota. I wanted to run this morning but it seemed like it would be too windy, so I decided against it.
My mom hadn't eaten when I got up so we decided to try something new! We used the Taste of Home October/November 1993 magazine. Yes, we still have it. Ha ha! We made the recipe entitled "Baked Peach Pancake."
First, you combine fresh peaches in a bowl with sugar and lemon juice (in our case, canned peaches, frozen blueberries, sugar and lemon juice).
Then we beat the eggs until fluffy, add flour, salt and milk and beat until smooth.
Place butter in a 10 inch skillet, bake at 400 degrees for 3-5 minutes on until melted. Immediately we poured our batter in the hot skillet and baked it for 2-25 minutes. It came out all risen like a pop over!
We put our fruit into it, sprinkle a little nutmeg over it, and sliced it up and served it. It was delicious! I think there could have been a sauce with the fruit that would have made it even better! We are going to try it tomorrow morning for my dad and use half olive oil (instead of all that butter) and half whole wheat flour.
Here are the ingredients:
-2 cups fresh or frozen lived peeled peaches
-4 teaspoons sugar
-1 teaspoon lemon juice
-3 eggs
-1/2 cup all-purpose flour
-1/2 cup milk
-1/2 teaspoon salt
-2 tablespoons butter
ground nutmeg
Sour cream, optional (serve the finished pancake .. we didn't think this sounded so appetizing ;) )
Then, mom suggested a walk since we both needed to work out. So I agreed and we took a lovely three mile walk. The third mile was tough, we were going against the wind for half of it. But we endured and the result was satisfying.
I had to get ready for work and I needed to eat lunch. I was craving hash browns because I had seen a recipe with hash browns in it. Mom said we could have hash browns for supper, so I had to be satisfied with my egg sandwich with black forest ham and mozzarella cheese. It was actually quite tasty.
For supper, I brought home some cheddar brats that we make at the meat market since they were on sale and would go splendidly with hash browns. I've been waiting since I started working there to try these. (That was back in August.) They were really good! Although I didn't quite know what to eat it with.. It wasn't right having ketchup on a cheesy brat, but it was almost overpowering without anything else. I'm going try it in scrambled eggs! I think that will be perfect!
I didn't take a picture of supper.. I was so eager to eat it, I didn't even think to take a picture. I literally was so excited to eat this all day long!
After supper, mom needed me to make some cookies and bars for her piano recital tomorrow. I got two recipes off of the blog Bakin' and Eggs (also author of Peanut Butter Runner). I made Peanut Butter Chocolate Chip Bars and Oatmeal Raisin Cookies. I didn't get the cookies baked, mom is going to do that tomorrow. I think mom wanted me to make them so she wouldn't be temped to snitch some of the dough. But it was just as hard for me. I have no problem with being a health conscious eater, but also having a little sweets on the side every once in a while. You just gotta watch portions. But since I am doing the Eight Week Get Healthy Challenge, I can only eat sweets once a week. Sunday, you cannot come soon enough!!
