Pass the honey, Honey

HONEY!

It's healthy for you!

So these are some reasons:


Sugar vs. Honey


Raw sugar is comparable to honey.  But once the sugar goes through the processing, all of the protein and "healthy stuff" gets broken down and we can't use it!  But honey-- here, let me let THEM explain it:

"Table sugar is sucrose, which is made up of two molecules bonded together. When we eat table sugar, our stomach has to use its own enzymes to separate the molecules apart before we can use the sugar's energy. Honey is quite different. The bees have added a special enzyme to the nectar that divides the sucrose into glucose and fructose -- two simple sugars for our bodies can absorb directly."

Honey can be used instead of sugar!
"Some minor adjustments may need to be made to a recipe when substituting honey for sugar:
1. Use equal amounts of honey for sugar up to one cup. Over one cup, replace each cup of sugar with 2/3 to 3/4 cup over honey depending upon the sweetness desired.
2. Lower the baking temperature 25 degrees and watch your time carefully since products with honey brown faster.
3. In recipes using more than one cup honey for sugar, it may be necessary to reduce liquids by 1/4 cup per cup of honey.
4. In baked goods, add 1/4 teaspoon of baking soda per cup of honey if baking soda is not already included in the recipe. This will reduce the acidity of the honey, as well as increase the volume of your product."

Honey on sandwiches

I cannot have a sandwich without moisture.  I always used to put mayo on my sandwiches but that obviously isn't the healthiest.  So, I was watching the Biggest Loser one night and they suggested using mustard instead.  Well, I don't much care for mustard, but I love honey mustard!  So I made this tasty little number:

-Half of a whole grain bagel
-mustard
-honey
-honey ham (sometimes called Virginia Ham)
-white cheese
-lettuce

Toast the bagel and spread mustard and honey onto it.  Add meat, cheese and lettuce and any other healthy sandwich toppings.  Tasty. Simple. Healthy.
